Filo Pastry Rolls

Yeah, you guessed it: I had a few sheets of filo pastry left from the cheese pie, so I decided to use them up for dinner tonight. And what simpler way than to just fill them with whatever you happen to have in your fridge at the moment.... I was very tired so I couldn't be bothered to give it much thought, and I went with a very conventional filling of cheese and ham, but I'm planning to try something more adventurous these days.

Ingredients - for 4 rolls

4 sheets of filo pastry
100 g (3.5 oz) ham (diced)
200 g (7 oz) cream or cottage cheese
1 egg
salt
oregano
oil

Combine the ham, cheese, egg and oregano and season with salt (the egg will keep the filling from being to runny). Roll up in filo pastry and deep fry or simply fry in a hot, oiled pan till golden brown.

Yup I saw the filo pie crust in the frozen section of the supermarket
and decided to try it.

Turns out I made a really nice spinach
and cheese filo.

Delicious and I didn't expect it to come out good on the 1st try either but somehow it worked. hmmm hmmm
