
This is another wonderful summer salad, and maybe my personal favorite. I usually eat it a few times a week during the summer, and sometimes, when it's very hot, a Greek salad and a piece of bread are my whole meal. Again, as with the Caprese, try to use the best and freshest ingredients available.
Ingredients
2 tomatoes (cut into wedges)
1 smaller cucumber (diced or sliced)
1/2 onion (sliced)
120 g/4 oz feta cheese (diced, grated or crumbled)
10-15 black olives
1-2 tbsp lemon juice
salt, pepper
1/2 tsp dried oregano
2 tbsp extra virgin olive oil
2 tbsp fresh parsley (chopped)
