I'm a big fan of lemon, so this is my favorite pasta recipe. It's also very quick and easy, and making it will only take you as long as it takes the spaghetti to cook. The quantity of lemon juice is a matter of taste, so I suggest starting with 1.5 lemons and then adding more if you like. I used 2.5 lemons, but I like everything pretty sour.
Ingredients (serves 4)
400 g spaghetti
300 g ham, boiled ham or corned beef (or whatever your favorite cold cut is)
200 g sliced olives
200 g cheese (grated)
2 tbsp butter
1 tsp dried thyme
the juice of 2-3 lemons
salt and pepper to taste
Boil the spaghetti.
In a separate pan heat the butter, then add the ham (finely diced) and olives. Cook for 5 minutes. Add the thyme and pepper (they will start releasing their fragrance into the hot butter), and then, after 10-20 seconds, the lemon juice. Mix with the drained spaghetti and stir in the cheese. The spaghetti should still be hot, so that the cheese can melt.

Lemon, butter, thyme...nice!
Toss in a couple of capers too, throw it back with some nice Chardonnay...oh yeah.

I really like lemons as well and this sounds good.
I don't often think of lemon with pasta but looking at this recipe, I'm not sure why not! What a great way to add a 'high note' to cooked pasta. This looks amazing. Thanks!

I did it with a dash of oregano instead of thyme (a little expensive here in southern brazil) AND cooked half the pasta with the same amount of lemon. How's that? Did I beat you?
